Roasted Sweet Potato, Goat Cheese & Arugula Sandwiches

Serves: 4 sandwiches
Vegetarian!

Ingredients
2 medium sized Sweet potatoes (thoroughly cleaned)
1 tablespoon Olive oil
1/4 cup Sun dried tomatoes
3 ounces Goat cheese
8 slices Bread
1 or 2 teaspoons Honey
2 ounces Arugula

Step by Step Instructions
  1. Heat oven to 400 and brush a baking sheet with some olive oil. Slice the sweet potatoes into rounds.
  2. Arrange the rounds in a single layer across the baking sheet, then brush them with more olive oil. Bake for 20 to 25 minutes, then remove them from the oven and allow them to cool.
  3. Mince the dried tomatoes into small pieces, then mash them together with the goat cheese in a small bowl.
  4. Spread each piece of bread with a tablespoon of the cheese and tomato mixture, layer some sweet potato rounds on one slice, drizzle with honey, the arugula, and another slice of bread. Repeat, then eat.
